Why use ripe kimchi?

Freshly made kimchi doesn’t absorb the broth easily because it’s too fresh.
It takes a long time for the broth to seep into the kimchi, and if the kimchi isn’t properly aged, the flavor may not be as rich.

Using kimchi that has been aged in the refrigerator for about six months allows the broth to penetrate well, resulting in a deeper flavor.

How to use Kimchi

  • Use kimchi that has been well-ripened for more than 6 months in the kimchi refrigerator.

How to Use Pork

  • Apply cooking oil to a frying pan and stir-fry pork.

Type A Kimchi Stew Recipe

A. Put cooking oil in a frying pan and stir-fry the pork until it turns golden brown.
B. Put 500ml of water in a pot and bring it to a boil.
C. Dissolve 1/3 tablespoon of doenjang in water. [Adding doenjang enhances the richness of the dish.]
D. Cut 4 well-aged kimchi leaves from the refrigerator into pieces suitable for eating and add them.
E. Add the cooked pork from the frying pan to the pot.
F. Add 1/2 tablespoon of minced garlic.
G. Add 1/2 tablespoon of red pepper flakes.
H. Close the lid of the pot and simmer over low heat for 15 minutes.
I. Add seasonings. [If the kimchi is salty, omit the salt and add 1/4 tablespoon of MSG to enhance the umami.]
J. Finely chop green onions and add them.
K. Let it simmer for another 2 minutes.
L. Turn off the gas stove and enjoy your meal.

Type B Kimchi jjigae Recipe

A. Put 500ml of water in a pot and bring it to a boil.

C. Cut 4 well-aged kimchi leaves from the refrigerator into pieces suitable for eating and add them.
D. Instead of pork, add 2 pork ribs with meat attached to the pot.
E. Add 1/2 tablespoon of minced garlic.
F. Add 1/2 tablespoon of red pepper flakes.
G. Close the lid of the pot and simmer over low heat for 10 minutes.
H. Add seasonings. [If the kimchi is salty, omit the salt and add 1/4 tablespoon of MSG to enhance the umami.]
I. Cut the meat into bite-sized pieces using tongs and scissors.
J. Cover and simmer for another 10 minutes.
K. Finely chop green onions and add them.
L. Let it simmer for another 2 minutes.
M. Turn off the gas stove and enjoy your meal.

How to Use Pork

Type C Kimchi Stew Recipe

A. Put cooking oil in a frying pan and stir-fry the pork until it turns golden brown.
B. Put 400ml of water in a ttugbaegi and bring it to a boil.
C. Dissolve 1/4 tablespoon of doenjang in water. [Adding doenjang enhances the richness of the dish.]
D. Add 1 tablespoon of bone meal.
E. Cut 3 well-aged kimchi leaves from the refrigerator into pieces suitable for eating and add them.
F. Add the cooked pork from the frying pan to the pot.
G. Add 1/3 tablespoon of minced garlic.
H. Add 1/3 tablespoon of red pepper flakes.
I. Close the lid of the pot and simmer over low heat for 15 minutes.
J. Add seasonings. [If the kimchi is salty, omit the salt and add 1/5 tablespoon of MSG to enhance the umami.]
K. Cover and simmer for another 10 minutes.
L. Finely chop green onions and add them.
M. Let it simmer for another 2 minutes.
N. Turn off the gas stove and enjoy your meal.




It tastes better if you add tofu.

Cut the tofu into bite-sized pieces and put it in.
3 pieces of tofu are suitable for 1 serving of earthenware pot.


Kimchi stew seasoning


When using fresh pork.


To remove the pork odor, first put 150ml of water in a pot.
Add 1/3 tablespoon of doenjang and mix well.



Boil the pork in the water with dissolved doenjang. [This can help remove the pork odor.]
Once it boils sufficiently, add the remaining 400ml of water and continue boiling according to the recipe below.

The reason for adding an additional 50ml of water is to compensate for the amount of water evaporating as steam.
Once you’ve completed all the steps, follow the recipe for Type C.

A. Add 1 tablespoon of bone meal.
B. Cut 3 well-aged kimchi leaves from the refrigerator into pieces suitable for eating and add them.
C. Add 1/3 tablespoon of minced garlic.
D. Add 1/3 tablespoon of red pepper flakes.
E. Close the lid of the pot and simmer over low heat for 15 minutes.
F. Add seasonings. [If the kimchi is salty, omit the salt and add 1/5 tablespoon of MSG to enhance the umami.]
G. Cover and simmer for another 10 minutes.

I. Let it simmer for another 2 minutes.
