Korean food has seasonal foods for every hot and cold weather.
Food eaten as a health food to keep cool in hot weather or to protect the body because the body sweats a lot!
It is divided into foods that warm the body in the winter or are good to eat in winter.
Let’s learn about seasonal Korean food.

Korean Summer Delicacies


Korea is a country with four seasons.
Among seasonal foods, what appeal does summer food have?
And what appeal does winter food have?

Let me introduce summer food first.
Summer foods are mainly foods that cool or protect the body.
There are a variety of summer foods, but I will introduce the 6 most popular ones.

A. Samgyetang [ Korean Summer Delicacies ]

Samgyetang is made by removing all the internal organs of a raw chicken.
Put jujube, Astragalus, and rice into the stomach to the intestines removed, and twist the chicken’s legs to prevent the stomach from moving.

Place the finished chicken in a pressure cooker and cook for about 30 minutes.
Then, place the cooked chicken in an earthenware bowl with the broth, add ginseng root, and boil again.

The finished sam gyetang has soft meat and has the function of protecting the body.
Medicinal ingredients such as astragalus, jujube, and ginseng seep into the soup, making it a soup that is good for the body.

Astragalus: Astragalus is a root plant. The effectiveness of Astragalus is due to exposure to the hot sun in the summer, which weakens the body and causes excessive sweating.
It increases the body’s weakened immunity and helps restore energy.

Jujube: Jujube is a small, oval-shaped fruit. It has a crunchy texture and contains ingredients that strengthen blood pressure and immunity.
Ginseng: Ginseng is a root plant. Ginseng has a variety of functions, including strengthening immunity, preventing low blood pressure, and relieving fatigue. In particular, saponin, the main component of ginseng, contains various properties such as cancer prevention, cardiovascular disease, and toxin removal.

In Korea, there are three bok days in the summer: Chobok, Jungbok, and Malbok, and these are the days to eat foods that protect the body. I usually eat a lot of sam gyetang.
Bok Day is the day when many chickens die.

B. Cold Noodles [ Korean Summer Delicacies ]

Naengmyeon is a cold food. Cook the noodles in hot water, then rinse again in cold water.
The broth used for Cold Noodles is half-frozen broth and is made with pears, boiled pork, cucumber slices, half a boiled egg, and 3 slices of thinly sliced radish.

The broth is sour, sweet, and savory. Some people eat ColdNoodles with mustard sauce.
If you eat ColdNoodles in the summer, you can feel your hot body cooling down.

There are three types of cold noodles with soup.

There are three types: Hamheung Naengmyeon, Pyongyang Naengmyeon, and Arrowroot Naengmyeon.

Each type of naengmyeon has different noodles.
Potato starch noodles are made by kneading potato starch. [Using Hamheung Naengmyeon]
Buckwheat noodles are made by kneading buckwheat flour. [Use Pyongyang Naengmyeon]
Arrowroot noodles are made by squeezing the juice of arrowroot root and mixing it into noodles. [Using arrowroot cold noodles]


C. Red bean shaved ice [ Korean Snacks ]

Red bean shaved ice is made by putting milk, red beans, jelly, cereal, etc. on top of ground ice and mixes them well before eating.
Since the red bean paste has a sweet taste, there is no need to add additional syrup.

If you eat cold shaved ice on a hot day, your body temperature will drop by about 2 degrees.
Red bean shaved ice, a summer delicacy, is made with its own recipe, so there are many different types of shaved ice.


D. Hwachae [ Korean Snacks ] Fruit Punch

This is a refreshing snack to eat in the summer.
This is a salad made with various fruits mixed with ice and cider.
It is a fruit salad that is usually made by adding watermelon, pineapple, grapes, apples, and kiwi, pouring cider on top, and finally adding ice.

If you combine the flavors of various fruits, the tangy taste of carbonation, and even cool ice, you get a refreshing and sweet fruit salad.
It is one of the fruit salads often eaten in summer in Korea.

E. Bibim Noodles [ Korean SummerDelicacies ]

Unlike naengmyeon, this is one of the noodle dishes where the noodles are mixed with red pepper paste seasoning.
Bibim noodles do not contain ice.
First, place the noodles in boiling water and boil for about 1 minute.

Rinse the boiled noodles in cold water.
This is a noodle dish made by mixing cooled noodles with a seasoning sauce made from red pepper paste, sesame oil, sugar, vinegar, and sesame seeds.

It has a sour, sweet and slightly spicy taste that will appeal to your taste buds.
It is one of those foods that energize you with the harmony of three flavors.



F. Cold Cucumber Soup [ Korean SummerDelicacies ]

Cucumber soup is a cold dish with ice in cold water and various vegetables, seaweed, and cucumbers.
This food is also commonly eaten in summer, and the ice in the water gives it a cool feeling.

If you eat cool and sour cold cucumber soup on a hot day, your body temperature will drop and the sour taste will revive your appetite.
Cold cucumber soup contains cucumbers, carrots, seaweed, green onions, sesame seeds, and red pepper.

Seasonings include vinegar, sugar, plum juice, and salt.
Just pour water into a bowl, add ice on top, add all the following ingredients and mix.
Be sure to try refreshing cold cucumber soup in the summer.


Korean Winter Foods and Snacks


When I think of winter, the food that comes to mind most is sweet potatoes.
If you roast sweet potatoes on a cold, snowy winter day and eat them while watching the snow fall outside the window, you can enjoy the warm, sweet sweet potatoes even more.

In winter, we prefer foods that can keep us warm and protected.
Foods with soup or foods that can be eaten warm on the street are popular.

Hotteok, bungeobbang, and fish cake soup are the foods that come to mind while walking down the street in winter.
There are a variety of foods that can be eaten warm with soup, such as kalguksu, oyster soup, and stir-fried briquette ribs.

A. Kalguksu

Kalguksu is a dish made by boiling thick noodles made of flour with clams, salt, and soup soy sauce.
The soup from the clams adds richness and becomes a refreshing soup.

If you eat warm kal guksu soup on a snowy day, your body will melt and become warm all over.
Kalguksu tastes even better when you eat it with freshly made geotjeori.


B. Fish cake soup – eomugtang [ Korean Street Treats ]

Fish cake soup is a food commonly eaten on the streets.
Fish cake is a flat dough made by mixing flour, mashed cod fish, chives, carrots, onions, peppers, and eggs.

It is completed by adding radish, onion, green onion, anchovy, etc. to the boiled broth, putting fish cakes on a skewer and boiling them with the broth.
Fish cake has a unique savory taste, so once you try it, you’ll want to keep eating it.

It is a common food in Korea and is usually sold at snack bars.




C. Bungeobbang – Carp Shape bbang [ Korean Street Treats ]

Bungeoppang is a carp-shaped bread with red bean paste in the center of cooked flour dough.
It is a snack that many people look for due to the stickiness of the dough and the sweetness of the red bean paste.

As the cost of living is rising these days, the price of bungeoppang has also risen a lot.
Three years ago it was $2 for 5 pieces, now it is $2 for 3 pieces.

It can be commonly found on the streets in winter, but the higher prices prevent many people from purchasing it.
So, more and more people are purchasing bungeoppang molds and making them themselves.

D. Hotteok [ Korean Street Treats ]


Hotteok

Hotteok is also a representative street food.
There was a time when I ate the hot and sweet sauce in hotteok without letting it cool down, and my palate got so hot that it hurt.

Still, I was so captivated by the sweet and chewy taste of hotteok that I ate it until the end.
Hotteok is made by adding a mixture of sugar, cinnamon powder, and peanut powder to a chewy flour dough and frying it in oil.

When hotteok is fried in oil, the seasoning inside melts and becomes very hot.

E. Ho bbang [ Korean Street Treats ]


Ho bbang

Hobbang is a dome-shaped bread filled with various sauces such as red bean paste, pizza sauce, vegetables and sauce, and hot chicken sauce.
The bread is fluffy and is cooked by putting it in a bread machine and cooking it with steam, just like dumplings cook with steam.

Although it is a refrigerated food, you can put it in the freezer to extend its shelf life and take it out one by one when you eat it.
You can steam it with steam, but you can also put frozen buns on a plate, slightly moisten them with water, and microwave them.

This product only appears in the cold winter, and once winter ends, the bun factory stops producing it.
It is a snack that always appears during winter in Korea and disappears when winter ends.

F. Sweet Potato [ Korean Street Treats ]


Sweet Potato

Sweet potatoes are a type of plant root and have an oval shape.
Sweet potatoes themselves have a strong sweet taste, so when you grill them over charcoal without any seasoning, the sweet potato taste is boiled to its peak.

There are two types of sweet potatoes.
There are pumpkin, sweet potatoes and chestnut sweet potatoes.

Pumpkin sweet potatoes are yellow in color and have a strong sweet taste.
When sweet potatoes are cooked, they are not mushy and have a lot of moisture.

Chestnut sweet potatoes are slightly gray in color and have a weaker sweet taste than pumpkin, sweet potatoes.
Sweet potatoes themselves have little moisture, so they are crumbly. When you go camping, take sweet potatoes with you and cook them over charcoal. They are really delicious.


We learned about Korea’s summer and winter foods.
There are many more foods, but we have introduced 6 foods for each season.
Seasonal food has its charm only when eaten in that season, so in Korea, it is sold only in that season.
The foods I introduced can be easily made at home.
